Ingredients

  • 1 Burger bun
  • 2 slices of sheep cheese
  • 1 slice of country ham
  • Arugula
  • Onion and raisin compote
  • 100g onions
  • 100g white grapes
  • 25cl sweet Jurançon
  • Béarnaise sauce

Preparation

Prepare the onion and raisin compote: Sauté the onions with the grapes and adjust the seasoning. Reduce the white wine until it’s completely evaporated, then let it cool.

Prepare the béarnaise sauce: Make the béarnaise sauce and keep it warm or let it cool according to your preference.

Prepare the bun: Open the burger buns in half and spread béarnaise sauce on each side.

Assemble the burger:

  • On the base of the bun, add the onion and raisin compote
  • Place a slice of sheep cheese
  • Cook the pulled burger and place it on the bun, then add the compote and melted cheese
  • Add another slice of cheese and keep warm.

Grill the ham and finish: Grill the slice of ham and retrieve the bun kept warm.

  • Place the arugula, then the grilled ham
  • Cover with the top of the bun and skewer everything to hold it in place.
