Preparation tips

Prior defrosting for 8 hours in a cold room.

Cold tasting: remove the skin using a knife and slice the product to your liking.

Hot tasting: Slice the belly (around 40g slice) and pan-fry on the skin side for 1 to 2 minutes for an exceptional three-cooking finish.
