The Rougié Scallop, the new inspiration for Chefs
Maison Rougié enriches its range of seafood products with its French wild Scallop (Pecten maximus), an exceptional product emblematic of Gastronomy. Harvested through responsible seasonal fishing in the cold waters of the English Channel, outside the breeding period, the Scallops are “white” (without coral). Individually frozen, the Scallops retain the original qualities of the fresh product for a firm and melting texture and a characteristic iodized taste.

Sauté preparation: Sauté the Scallops directly from frozen, after lightly salting, in a greased pan over medium heat for 2 minutes, add a knob of butter, baste then flip and let caramelize for 2 minutes, continuing to baste. Remove and season as desired. Remove when the texture becomes firm and slightly spongy.
The Scallops can also be cooked thawed, cook them as a fresh product.
